These pancakes will make you want to hurry back from the gym! Simply add 3 ingredients to your favorite pancake batter to create this protein packed stack: Oriya Organics Gather Paleo Plant Protein powder, Dark Chocolate Chips, and Sunflower Butter. Enjoy topped with pure maple syrup and a cup of coffee-- you'll be in post-workout heaven!

Chocolate Protein Pancakes

Your pancake mix of choice, plus needed add-ins for 10-12 pancakes (We love Birch Benders!
1/2 Cup Dark Chocolate Chips (Enjoy Life brand is Paleo-friendly)
1 Tablespoon Sunflower Butter
Coconut Milk or Water (additional liquid of your choice for thinning batter)
Coconut Oil for frying
Maple Syrup for topping
Start by melting the chocolate chips with the sunflower butter. Mix until smooth.
Make pancake batter as directed with listed ingredients and proportions*. Add the Oriya Organics Gather Paleo Plant Protein powder. Slowly whisk in the melted chocolate and sunflower butter mixture. Keep adding coconut milk or water until you reach your desired batter consistency. I found that adding a 1/2 cup of coconut milk and a 1/2 cup of room temperature water to my batter was helpful in achieving my desired result.
In a non-stick skillet, melt coconut oil over medium-low heat. Spoon the batter onto the skillet and flip once the bottom is slightly brown. Make sure you are using a clean spatula each time. Keep your eyes on the pan as this flippin' process goes pretty quickly!
Top with maple syrup, serve and enjoy.
