Nimai's Ultra Green Pesto Gnocchi

Nimai's Gnocchi
 All I want is comfort food when it gets cold outside. My go-to quick winter dinner is pesto Gnocchi. As I was selecting the pesto at Whole Foods, I thought about adding Oriya's 100% Greens. Greens give me sustained energy and are easy to absorb in powder form. So I took a risk-- I added a scoop to the pesto and LOVED the result! What an easy and delicious way to get my daily serving of SuperGreens in! I recommend trying this recipe for SuperGreen Pesto Gnocchi. It's a sneaky, easy way to add nutrients to a classic comfort food. 
SuperGreen Pesto Gnocchi
(All ingredients can be purchased at Whole Foods with Oriya Organics products)
2 Cups Gnocchi
1 Zucchini, sliced
1 Cup Heirloom Cherry Tomatoes, halved 
1 Cup Basil Pesto
1 tsp minced Garlic
2 TBS chopped Onion
Salt, Pepper
Olive Oil
Bring a medium pot of water to a boil and prepare Gnocchi as directed.
Coat the bottom of a non-stick skillet with olive oil, set to low heat and add garlic and onion. Let simmer until fragrant. Then add zucchini.
Meanwhile, combine Oriya Organics 100% Greens and pesto, mix well and set aside. 
When the Gnocchi is finished, discard the water and add the Gnocchi pillows to the skillet. Raise the heat to medium-high. Slowly stir in the pesto. Let your SuperGreen Pesto Gnocchi cook for another couple of minutes, stirring frequently, until heated all the way through.
Serve and top with the tomatoes adding salt and pepper to taste.
